- 1 ½ pounds boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
- 2 tablespoons butter
- ¼ cup all-purpose flour
- 2 cups chicken broth
- 1 cup whole milk
- ½ teaspoon dried thyme
- ½ teaspoon paprika
Instructions
- Season the chicken breasts dry and season both sides with salt, pepper, garlic powder, onion powder, and paprika. Let them sit for a few minutes while you heat the pan. This small pause allows the seasoning to settle into the meat.
- Sear until golden in olive oil in a large skillet over medium heat. Add the chicken and cook for about 5–6 minutes per side, until golden brown and cooked through. Remove the chicken from the pan and set aside on a plate. Cover loosely to keep warm.
- Make the roux in the same skillet, melt the butter. Sprinkle in the flour and whisk continuously for about 1–2 minutes. The mixture should turn slightly golden and smell nutty. This is the foundation of your gravy.
- Build the gravy by pouring in the chicken broth while whisking to prevent lumps. Once smooth, add the milk and dried thyme. Continue stirring until the gravy thickens, about 3–5 minutes. It should coat the back of a spoon and look velvety.
- Return the cooked chicken back into the skillet, spooning the gravy over the top. Let it simmer gently for 5–7 minutes so the flavors meld together beautifully.
