- 4 boneless, skinless chicken breasts or thighs
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 large yellow onion, sliced
- 2 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon Worcestershire sauce
- 4 ounces provolone cheese, sliced
- 4 ounces mozzarella cheese, shredded
- 4 ounces sliced white American cheese
- 4 hoagie rolls
- 1 cup sliced mushrooms (optional)
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Begin by thinly slicing your bell peppers and onions. If you prefer a finer texture, you can julienne them.
- For the chicken, place the boneless, skinless chicken breasts or thighs whole into the slow cooker, or cut them into larger chunks or strips before adding them.
- Place the chicken (whole or cut) at the bottom of your slow cooker. Evenly spread the sliced bell peppers and onions over the chicken.
- Sprinkle the garlic powder, onion powder, dried oregano, salt, and black pepper generously over the chicken and vegetables. Pour the chicken broth over everything. Optionally, add a splash of Worcestershire sauce.
- Cover your slow cooker and cook on the LOW setting for 6-8 hours, or on the HIGH setting for 3-4 hours.
- Once the cooking time is complete, carefully remove the chicken from the slow cooker and shred it into bite-sized pieces.
- Return the shredded chicken to the slow cooker with the vegetables and stir until combined.
- Lightly toast your hoagie rolls. Pile a generous amount of the chicken and veggie mixture onto each toasted roll.
- Lay slices of provolone, mozzarella, and American cheese over the filling. Melt the cheese under a broiler for 1-2 minutes or microwave for 30 seconds to a minute.
- Serve hot and enjoy your simple, flavorful sandwiches!

- To julienne the bell peppers and onions, slice them into thin strips for a finer texture.
