Description

A delicious and easy slow cooker chicken philly sandwich recipe that is perfect for a quick dinner.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 large yellow onion, sliced
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon Worcestershire sauce
  • 4 ounces provolone cheese, sliced
  • 4 ounces mozzarella cheese, shredded
  • 4 ounces sliced white American cheese
  • 4 hoagie rolls
  • 1 cup sliced mushrooms (optional)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Begin by thinly slicing your bell peppers and onions. If you prefer a finer texture, you can julienne them.
  2. For the chicken, place the boneless, skinless chicken breasts or thighs whole into the slow cooker, or cut them into larger chunks or strips before adding them.
  3. Place the chicken (whole or cut) at the bottom of your slow cooker. Evenly spread the sliced bell peppers and onions over the chicken.
  4. Sprinkle the garlic powder, onion powder, dried oregano, salt, and black pepper generously over the chicken and vegetables. Pour the chicken broth over everything. Optionally, add a splash of Worcestershire sauce.
  5. Cover your slow cooker and cook on the LOW setting for 6-8 hours, or on the HIGH setting for 3-4 hours.
  6. Once the cooking time is complete, carefully remove the chicken from the slow cooker and shred it into bite-sized pieces.
  7. Return the shredded chicken to the slow cooker with the vegetables and stir until combined.
  8. Lightly toast your hoagie rolls. Pile a generous amount of the chicken and veggie mixture onto each toasted roll.
  9. Lay slices of provolone, mozzarella, and American cheese over the filling. Melt the cheese under a broiler for 1-2 minutes or microwave for 30 seconds to a minute.
  10. Serve hot and enjoy your simple, flavorful sandwiches!
