Description

Delicious and healthy chicken breast cooked in a rich tomato sauce.


Ingredients

Scale
  • 4 pieces boneless, skinless chicken breasts
  • 1 can (15 oz) diced tomatoes
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 tsp dried oregano
  • 1 tsp dried basil (or fresh if available)
  • to taste salt and pepper
  • 1 tbsp olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Pat the chicken breasts dry and season with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until browned and cooked through.
  3. Remove chicken from the skillet, add diced onion and garlic to the same pan, and sauté until onion is translucent, about 3-4 minutes.
  4. Add canned diced tomatoes, oregano, and basil to the skillet. Stir and let simmer for about 10 minutes.
  5. Return the chicken to the skillet, covering with the tomato sauce. Cook for an additional 5 minutes.
  6. Serve hot, garnished with chopped parsley.
