Delicious and healthy chicken breast cooked in a rich tomato sauce.
Ingredients

- 4 pieces boneless, skinless chicken breasts
- 1 can (15 oz) diced tomatoes
- 3 cloves garlic, minced
- 1 medium onion, diced
- 1 tsp dried oregano
- 1 tsp dried basil (or fresh if available)
- to taste salt and pepper
- 1 tbsp olive oil
- 1/4 cup fresh parsley, chopped
Instructions
- Pat the chicken breasts dry and season with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until browned and cooked through.
- Remove chicken from the skillet, add diced onion and garlic to the same pan, and sauté until onion is translucent, about 3-4 minutes.
- Add canned diced tomatoes, oregano, and basil to the skillet. Stir and let simmer for about 10 minutes.
- Return the chicken to the skillet, covering with the tomato sauce. Cook for an additional 5 minutes.
- Serve hot, garnished with chopped parsley.
