- ½ cup finely grated cucumber (about ½ medium cucumber)
- 1–2 garlic cloves (minced)
- 1 tbsp fresh lemon juice
- 1 tbsp olive oil
- 1–2 tbsp fresh dill (finely chopped or 1 tsp dried dill)
- ¼ tsp salt (or to taste)
- Pinch of black pepper
Instructions
- Grate the cucumber, then place it in a clean towel or paper towel and squeeze out as much liquid as possible. This step is key for a thick, creamy tzatziki.
- In a bowl, add the Greek yogurt, garlic, lemon juice, olive oil, dill, salt, and pepper. Stir until smooth and well combined.
- Fold in the grated cucumber. Mix until evenly distributed.
- Refrigerate for 15–30 minutes to let the flavors come together.
- Adjust salt, lemon juice, or dill based on preference.
