Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together flour, baking soda, ginger, cinnamon, and a pinch of salt.
- In another bowl, cream softened butter and granulated sugar until light and fluffy (about 2 minutes).
- Add molasses and egg to the creamed mixture; mix until well combined.
- Gradually incorporate dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Scoop tablespoon-sized balls onto a lined baking sheet, leaving space between each ball.
- Bake for 8-10 minutes until edges are firm but centers remain soft.
Notes

- For extra flavor, add a pinch of nutmeg or cloves.
