- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 onion, sliced
- 4 garlic cloves, minced
- 2 tablespoons tomato paste
- 3 cups beef broth
- 1 tablespoon Worcestershire sauce
- 3 cups baby carrots
- 3 cups baby potatoes
- 1 bay leaf
- Fresh parsley, chopped
Instructions
- Season chuck roast with salt and pepper. Heat olive oil in a dutch oven and sear roast on all sides until browned.
- Remove roast. Add onion and garlic to pot and sauté until softened.
- Stir in tomato paste then add beef broth and Worcestershire sauce, scraping the pot.
- Return roast to pot and add carrots, potatoes, and bay leaf.
- Bring to a simmer, cover, and cook on low for 3 to 4 hours until tender.
- Remove bay leaf, shred meat slightly, and garnish with parsley before serving.
Notes
- For extra flavor, you can add herbs like thyme or rosemary.
- Serve with crusty bread for dipping in the delicious gravy.
