Description

A hearty and delicious slow cooker chuck roast recipe that is perfect for family dinners.


Ingredients

Scale
  • 3 to 4 pounds chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 3 cups baby carrots
  • 3 cups baby potatoes
  • 1 bay leaf
  • Fresh parsley, chopped

Instructions

  1. Season chuck roast with salt and pepper. Heat olive oil in a dutch oven and sear roast on all sides until browned.
  2. Remove roast. Add onion and garlic to pot and sauté until softened.
  3. Stir in tomato paste then add beef broth and Worcestershire sauce, scraping the pot.
  4. Return roast to pot and add carrots, potatoes, and bay leaf.
  5. Bring to a simmer, cover, and cook on low for 3 to 4 hours until tender.
  6. Remove bay leaf, shred meat slightly, and garnish with parsley before serving.

  • For extra flavor, you can add herbs like thyme or rosemary.
  • Serve with crusty bread for dipping in the delicious gravy.
