  • 1 teaspoon Diamond Crystal kosher salt
  • 3 large eggs
  • 1 teaspoon vanilla bean paste or 1 tablespoon pure vanilla extract
  • 11 strawberries, finely chopped
  • 1/3 cup granulated sugar (for filling)
  • 1 tablespoon water
  • 2 teaspoons cornstarch
  • 3 ounces cream cheese, at room temperature
  • 1/4 cup unsalted butter, at room temperature (for frosting)
  • 2 cups powdered sugar
  • 2 teaspoons sifted matcha

Instructions

  1. Heat the whole milk to lukewarm and mix with yeast and sugar, letting it froth for 5 minutes.
  2. Add eggs, vanilla, and melted butter to the mixture and whisk until smooth.
  3. Add flour and salt gradually to form a soft dough.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise for about an hour.
  6. Combine chopped strawberries, sugar, water, and cornstarch in a bowl to create the filling.
  7. Roll the risen dough into a rectangle and spread the strawberry filling evenly.
  8. Roll the dough tightly from one edge and slice it into rolls.
  9. Place the rolls in a greased baking pan and let rise for another 30 minutes.
  10. Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
  11. Beat cream cheese, butter, and powdered sugar until fluffy, then mix in sifted matcha for the frosting.
  12. Store leftover rolls at room temperature in an airtight container for up to 2 days.
